Directions

  1. This recipe is common to the Ethiopian Jews (Phalashi). My understanding is which these are NOT unique to them.
  2. Peel all vegetables , cut into small cubes. peel and mash the garlic.
  3. Heat oil in a large pan and add in vegetables. cover and saute/fry 2-3 min.
  4. Add in the ginger, turmeric, pepper and salt and mix well.
  5. Add in the water , stir and cook over very low flame for 30-40 min.
  6. Serve warm.
  7. Yield: 8 servings
