,%20so%20I%E2%80%99m%20rerunning%20a%20very%20old%20recipe;%20again,%20from%20a%20time%20before%20I%20had%20any%20readers%20to%20speak%20of.%3C/p%3E%3Cp%3ENo%20original%20photography%20for%20this%20one,%20I%E2%80%99m%20afraid%20%E2%80%93%20other%20than%20the%20pictures%20I%20took%20of%20Little%20Guy%20over%20the%20weekend,%20my%20camera%20has%20been%20sadly%20neglected.%20%20Which%20means%20I%E2%80%99ve%20already%20bombed%20out%20of%20Project365.%20%20Of%20course,%20there%E2%80%99s%20nothing%20that%20dictates%20you%20have%20to%20begin%20on%20January%201st%20or%20any%20other%20day%20so%20I%20can%20restart%20at%20any%20time,%20but%20until%20we%20get%20the%20unbloggable%20resolved%20in%20some%20fashion%20I%20can%E2%80%99t%20see%20trying%20to%20begin%20again.%20%20It%E2%80%99s%20all%20rather%20sucky,%20and%20I%E2%80%99m%20stuck%20with%20some%20stock%20photography%20for%20this%20one.%3C/p%3E%3Cp%3EAnyhoo,%20I%20love%20squash%20of%20all%20kinds,%20and%20Beloved%20is%20particularly%20fond%20of%20zucchini.%20%20You%20might%20not%20think%20to%20make%20a%20pancake,%20or%20blini,%20out%20of%20squash,%20but%20they%20are%20surprisingly%20good%20%E2%80%93%20I%20get%20frequent%20requests%20for%20them%20from%20all%20of%20the%20kids%20(The%20Young%20One%20excepted,%20of%20course).%20%20These%20are%20super%20easy%20to%20make%20and%20are%20a%20great%20way%20to%20use%20up%20surplus%20zucchini%20in%20the%20summer.%20%20Or%20even%20yellow%20summer%20squash,%20which%20works%20well%20too.%20%20This%20can%20be%20made%20low%20carb/gluten-free%20by%20substituting%20the%20all-purpose%20flour%20with%20a%20nut%20or%20soy%20flour.%3C/p%3E%3Cp%3EZucchini%20Pancakes%3C/p%3E%3Cp%3ECoarsely%20shred%20the%20zucchini;%20place%20it%20in%20a%20paper%20towel%20lined%20colander%20and%20press%20out%20as%20much%20moisture%20as%20you%20can.%3C/p%3E%3Cp%3EMix%20the%20zucchini%20with%20the%20rest%20of%20the%20ingredients%20except%20the%20vegetable%20oil%20in%20a%20large%20mixing%20bowl.%20Heat%20a%20large%20skillet%20over%20high%20heat%20until%20it%20nearly%20smokes;%20add%20enough%20vegetable%20oil%20to%20cover%20the%20bottom.%20Drop%20the%20zucchini%20mixture%20into%20the%20hot%20skillet%20by%20heaping%20spoonfuls,%20flattening%20them%20slightly%20with%20the%20back%20of%20the%20spoon;%20they%20should%20be%20about%202%201/2%20inches%20in%20diameter.%20Fry%20them%20until%20brown,%20about%203%20%E2%80%93%205%20minutes%20per%20side,%20using%20care%20when%20flipping%20them.%20Drain%20briefly%20on%20paper%20towels,%20then%20serve%20immediately.%3C/p%3E%3Cp%3EMakes%206%20%E2%80%93%207%20pancakes.%3C/p%3E){kind=link}
