Ingredients
- 3/4 c. key lime juice
- 2 tsp key lime juice
- 2Â 1/4 c. sweetened condensed lowfat milk
- 1 tsp grated key lime rind
- 3 x egg yolks
- 1 x 9" graham cracker pie crust
- Â Â sweetened whipped cream
Directions
- Squeeze juice from 4 large or possibly 6 small Key Limes and grate rind; set aside. Using a whisk beat egg yolks till buttercup yellow. Add in about half the condensed lowfat milk, using whisk. Blend well and add in remaining lowfat milk.
- Add in half the lime juice and blend slowly. Add in remaining juice and blend. Add in grated rind; mix and pour into chilled pie crust. Chill 4 hrs. May be frzn. To serve, slice while still frzn and let stand about 10 min. Top with whipped cream.
