- lightly salted boiling water
- Benedict
- 2 English muffins, halved and toasted
- sweet cream butter
- 4 slices Spanish ham or Serrano ham (or whatever ham you have)
- 4 warm poached eggs

.%20My%20time%20would%20come.%20Second%20quarter%20eventually%20came%20and%20I%20learned%20how%20to%20make%20a%20hollandaise%20sauce.%20I%20could%20now%20achieve%20what%20I%20thought%20was%20a%20magical%20gift%20only%20passed%20down%20to%20Mothers%20Day%20buffet%20chefs%20from%20some%20secret%20ancient%20breakfast%20scrolls%20hidden%20away%20in%20a%20mysterious%20mountain%20egg%20temple.%3C/p%3E%3Cp%3EMany%20many%20years%20have%20passed%20since%20my%20culinary%20school%20days.%20Technology%20has%20changed.%20Cooking%20knowledge%20has%20changed.%20There%20are%20secrets%20that%20you%20learn%20with%20experience%20but%20recipes%20have%20been%20broken%20down%20so%20that%20even%20the%20least%20experienced%20home%20cook%20can%20make%20fancy%20food.%20Eggs%20Benedict%20may%20not%20be%20the%20secret%20magical%20dish%20it%20once%20was%20but%20it%20is%20still%20really%20damn%20delicious.%20And%20that's%20what%20matters.%3C/p%3E%3Cp%3ESpanish%20Style%20Eggs%20Benedict%3C/p%3E%3Cp%3E(serves%202)%3C/p%3E%3Cp%3EMake%20the%20hollandaise.%3C/p%3E%3Cp%3ESet%20up%20a%20double%20boiler.%20I%20use%20a%20pot%20of%20boiling%20water%20and%20place%20a%20larger%20stainless%20steel%20bowl%20over%20the%20pot%20so%20that%20the%20bowl%20gets%20steam%20from%20the%20boiling%20water%20but%20doesn't%20touch%20the%20base%20of%20the%20pot.%20There%20you%20go,%20double%20boiler.%20Before%20putting%20the%20bowl%20over%20the%20boiling%20water,%20whisk%20the%20egg%20yolks,%202%20tsp%20water,%202%20tsp%20sherry%20vinegar,%20piment%C3%B3n,%20salt%20and%20pepper%20until%20fully%20incorporated%20and%20slightly%20lighter%20in%20color%20(20%20seconds).%20Place%20the%20bowl%20over%20the%20boiling%20water%20and%20vigorously%20whisk%20while%20adding%20in%20pieces%20of%20the%20butter.%20If%20it%20starts%20to%20separate%20or%20scramble%20the%20eggs%20pull%20the%20pot%20off%20the%20heat%20to%20adjust%20the%20temperature.%20As%20you%20add%20the%20butter%20the%20sauce%20should%20thicken%20and%20become%20emulsified.%20After%20you've%20whisked%20in%20the%20last%20bit%20of%20butter%20turn%20off%20the%20heat%20and%20season%20if%20needed.%3C/p%3E%3Cp%3EMake%20the%20poached%20eggs.%3C/p%3E%3Cp%3EIn%20a%20large%20pot%20of%20barely%20boiling%20salted%20water%20add%20the%20vinegar.%20Crack%20an%20egg%20into%20a%20small%20bowl.%20Create%20a%20whirlpool%20in%20the%20pot%20by%20stirring%20quickly%20in%20one%20circular%20direction.%20Carefully%20add%20the%20egg%20from%20the%20bowl%20to%20the%20center%20of%20the%20whirlpool.%20The%20circular%20water%20motion%20will%20help%20keep%20the%20egg%20from%20falling%20apart%20or%20disintegrating.%20Poach%20for%201-2%20minute%20or%20until%20just%20cooked%20through.%20Carefully%20remove%20the%20egg%20with%20a%20slotted%20spoon%20to%20a%20paper%20towel%20lined%20plate.%20Season%20with%20salt%20and%20pepper.%20Repeat%20the%20process%20until%20all%20the%20eggs%20are%20cooked.%3C/p%3E%3Cp%3EMake%20the%20Benedict.%3C/p%3E%3Cp%3EPlace%20two%20halves%20of%20the%20English%20muffins%20on%20a%20plate.%20Spread%20a%20little%20butter%20on%20them.%20Place%20a%20slice%20of%20ham%20on%20each.%20Top%20each%20with%20a%20poached%20egg.%20Cover%20with%20a%20large%20spoonful%20of%20hollandaise%20sauce.%20Garnish%20with%20piment%C3%B3n%20and%20celery%20leaves.%20Pretend%20it's%20Mother's%20day%20and%20drink%20mimosas%20for%20lunch.%20You%20deserve%20it.%20xoxo%3C/p%3E){kind=link}
