Tequila Spiked Watermelon Soup Recipe

  • 1 c. sugar
  • 1/2 c. tequila
  • 3/4 c. water
  • 1/4 c. triple sec
  • 1 c. heavy cream
  • 2 Tbsp. watermelon juice
  • 2 Tbsp. triple sec
  • 2 1/2 c. melon puree - (abt 3 c. diced seeded
  •     watermelon pureed and strained till smooth)
  • 1 1/2 c. tequila syrup
  • 1/4 c. tequila
  • 1/4 c. melon juice
  • 2 x limes juiced
  • 6 Tbsp. diced melon (red and yellow) for garnish
  • 1 Tbsp. triple sec
  •     Zest of 1 lime blanched in tequila syrup

Directions

  1. Make tequila syrup: Combine all syrup ingredients. Place on medium heat till sugar dissolves. Refrigeratetill cool.
  2. Make triple sec whipped cream garnish: Combine whipped cream ingredients and beat to stiff peaks. Pipe rosettes on waxed paper-lined pan. Freeze.
  3. Make soup: In a food processor place 3 c. of watermelon. Pour out excess juice and reserve. Puree watermelon till smooth. In a bowl combine the melon puree, the reserved juice, 1 1/2 c. tequila syrup, 1/4 c. tequila, juice of two limes and chill. In another small bowl combine 4 Tbsp. diced melons for garnish, 1 Tbsp. triple sec, and lime zest and chill.
  4. To serve, place whipped cream garnish in the bottom of a Kosher salt-rimmed bowl or possibly glass. Pour 6 ounces of soup into the bowl or possibly glass. Garnish with 1 Tbsp. of the diced melons and sprinkle with salt.
  5. This recipe yields 6 servings.
