Directions

  1. Utensils Required: Large frying pan, pot holder, measuring c., measuring spoons, large mixing bowl, wooden spoon, small mixing bowl, whisk, spatula, ovenproof plate, oven mitts.
  2. Yield: 20 pancakes

  4. Heat 2 tb of the butter in the pan over medium heat till it melts. Remove the pan from the heat and set aside.
  5. Place both flours, baking pwdr, sugar, and salt in a large mixing bowl and stir together with a wooden spoon.
  6. Break the egg into a small mixing bowl. Add in the melted butter and the lowfat milk and whisk together very well.
  7. Pour the egg mix into the flour mix and whisk till the batter is quite smooth and has almost no lumps.
  8. Preheat the oven to 200F.
  9. Heat a quarter of the remaining butter in the frying pan over medium heat.
  10. Holding the handle of the pan with a pot holder, tilt the pan so which the melted butter coats the bottom proportionately.
  11. To make a Teddy Bear pancake, spoon 1 tb of the batter into the pan for the body and then add in 1 tsp above the body for the head. With another tsp of the batter, make the ears, hands and feet. Make as many pancakes as will fit in the pan without touching.
  12. Cook the pancakes over medium heat till you can see bubbles on the top, about 2 min; then lift up one edge of a pancake with the spatula and look to see if the bottom is golden. If it is brown, flip it over and cook till the second side is golden, about 2 more min.
  13. Remove the cooked pancakes from the pan, place them on the oven proof plate, and set the plate in the oven to keep the pancakes hot till you are ready to eat.
  14. Heat more butter in the pan as needed and make more pancakes till the batter is gone.
  15. When you are ready to serve, put on the oven mitts and remove the plate from the oven.
  16. These pancakes are delicious served with applesauce which has been sweetened with a touch of honey.
