Sweet Potato Croutons Recipe

After a winter of using sweet potatoes for quite a number of dishes, I thought that they had been over used. Trying to come up with another sweet potato recipe seemed exhausting. They had been used in pies, muffins, cakes, dinners, you name it, I used them. But then I came across an idea to use sweet potatoes as croutons. Well, eating sweet potatoes for another meal again began to grow on me...

Directions

  1. Peel your sweet potatoes. Chop the sweet potatoes so that they are about 1/2 inch or look like the size of croutons. (My method was to cut each sweet potato in half, then cut those halves in half. Cut the quartered pieces into four and then cut those slices into crouton sized bites. Sounds complicated? Yeah... if it does, go ahead and do whatever works for you!)
  2. Toss the sweet potatoes in oil or butter, sprinkle with salt and pepper. Put in the oven for 10 minutes.
  3. After 10 minutes turn the heat up to 450*.
  4. Roast for another 5 minutes. If they are nice and crisp you can remove them. Or if they need to be a bit more crispier, you can leave them in for another 2 minutes or toss them into a skillet with some melted butter and fry on each side for 2 minutes.
