I love Chinese takeout, but wanted to make a healthier, cheaper version of it. I love the pairing of sweet and savory, and this is a great, easy recipe the whole family will love.
Ingredients
- 2 lbs. boneless, skinless chicken breast
- salt and pepper
- 3 red bell peppers
- 4 T. minced gingerroot
- 20 oz. can crushed pineapple
- 3 T. soy sauce
- 1 tsp. cumin
Directions
- Cut chicken into bite-sized pieces.
- Season with salt and pepper.
- Cut peppers into bite-sized chunks.
- Add pineapple, gingerroot, soy sauce, and cumin to a crockpot.
- Add chicken and bell pepper to crockpot.
- Cook over low for 6-8 hours.
- Serve over rice.
