Summer Peach Salsa Recipe

Ingredients

  • 1 ½ cups chopped peaches
  • ¼ cup minced red bell pepper
  • ½ jalapeño pepper, seeded and deveined, minced
  • ¼ cup minced red onion
  • Zest from ½ a lime (more to taste)
  • ½ tablespoon extra virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • Sweet-Tea Brined Pork Tenderloin
  • Serves 2-3
  • 1 lb pork tenderloin, trimmed
  • 1 quart cold tea
  • 2 tablespoons granulated sugar
  • 2 tablespoons salt
  • 1 teaspoon chili powder
  • ½ teaspoon freshly ground pepper, plus more to taste
  • ¼ teaspoon salt, more to taste
