Ingredients
- 2 medium green peppers
- 1/2 lb. ground beef
- 1 TBSP oil
- 2 TBSP chopped onion
- 1/2 tsp chopped garlic
- 1 TBSP flour
- 1/4 tsp salt
- 1/2 cup milk
- 3/4 cup Minute Rice
- 1/2 cup+ shredded cheddar cheese, divided
- 1/2 cup tomato sauce + topping
Directions
- Heat oven to 350F
- Cut peppers lengthwise.
- Remove stem ends and seeds.
- Bring 4 cups water to a boil in a medium sauce pan.
- Add peppers and simmer for 5 minutes. Drain.
- Place in a 9x9 inch square pan and set aside.
- Brown meat, onion and garlic in hot oil in a large skillet.
- Stir in flour and salt.
- Gradually stir in milk.
- Bring to a boil.
- Reduce heat and simmer for 1 minute or until thick.
- Stir in Minute Rice, tomato sauce and 2 TBSP cheddar cheese.
- Spoon mixture into pepper halves.
- Pour tomato sauce over peppers and sprinkle with the remaining cheese. Bake for 15 minutes
