Spring Salad of Mâche, Peas, and Radishes with a Lemon-Walnut Vinaigrette Recipe

Ingredients

  • ½ cup fresh or frozen peas
  • 4 cups mâche or mâche rosettes
  • 1 cup watercress
  • ½ cup microgreens (I used Kale microgreens) or pea sprouts
  • about 20 snow peas, trimmed
  • 2 radishes, trimmed and very thinly sliced
  • ¼ cup feta cheese
  • For the vinaigrette:
  • 1/3 cup walnut oil
  • zest from 1 lemon
  • 3 tablespoons lemon juice (about 1 ½ lemons)
  • 1 heaping tablespoon minced shallot
  • ½ teaspoon Dijon mustard
  • Generous pinch of sugar
  • Salt, to taste
  • Freshly ground black pepper, to taste
