This light and healthy dinner is easy and quick to make, even midweek! Top the lemon garlic shrimp with whatever you like. I often use shredded cabbage and homemade guacamole but mango, pineapple, or corn salsa would be tasty, too!
Ingredients
- 30 large raw shrimp (shells removed)
- Juice and zest of one large lemon
- 3 garlic cloves, minced
- 2 T olive oil
- 1.5 tsp honey (optional)
- 1/4 tsp salt
- 1/4 tsp ground pepper
- 4 tortillas (corn or flour) or taco shells
Directions
- If using frozen shrimp, defrost them in a bowl of cold water
- Whisk together the lemon juice and zest, garlic, oil, honey, salt and pepper and place in a Ziploc bag
- Remove shrimp tails and slice shrimp in half lengthwise
- Place shrimp in Ziploc and allow to soak in marinade for 5 minutes
- Preheat a pan on medium-high heat
- Remove shrimp from marinade and saute until cooked through (approximately 1.5 minutes)
- Serve shrimp and with whatever taco fixings you like in individual bowls and allow each person to design their own tacos
