1/2 cup very small broccoli florets
3/4 cup instant polenta
1/2 cup unbleached all purpose flour
1 tsp baking soda
1 tsp salt, or to taste
ground black pepper, to taste
1 large egg
1 cup low fat buttermilk
1 cup fresh or frozen corn kernels
1/3 cup red bell peppers, finely diced
1 Tbsp minced jalapeño {seeds & ribs removed to mellow the heat}, optional
2 Tbsp thinly sliced scallion
3 Tbsp fresh chopped cilantro
1 cup grated reduced fat cheddar or Monterey Jack
canola oil
