Sausage Stuffed Peppers Recipe

  • 1 box stuffing mix, the size which serves 4 (chicken flavored is good)
  • 1 x tube of pork breakfast sausage
  • 1 can whole kernel corn (15 oz size), liquid removed
  • 4 x really large green peppers
  •     Grated cheddar cheese

Directions

  1. 1. Cut the peppers in half, seed them and drain. Parboil them till tender
  2. (leave them a little crisp so they do not collapse).
  3. 2. Saute/fry the sausage until brown and drain it to remove excess grease. Easy way to do this is to line a colander with paper toweling.
  4. 3. Make the stuffing mix according to directions.
  5. 4. Combine the stuffing, sausage and corn, and stuff the pepper halves.
  6. Place peppers in a baking dish and add in about 2 Tablespoons of water to the pan-no more is necessary. Bake for 20 min at 350 degrees. Remove from oven, sprinkle with cheddar cheese, return to oven for 15 min or possibly till cheese melts.
  7. HINT: Do you have trouble standing up your pepper halves Instead of slicing them horizontally, slice them vertically into halves. You do not have to stem them unless you want to.
