Love to make this side dish when fresh spinach is ready in the garden!
Ingredients
- Fresh picked spinach (1 gallon bag washed and ready to cook)
- 1/4 Cup Onion, diced
- 2 Tablespoons Olive Oil
- 2 Tablespoons Butter
- 2 Tablespoons Low Sodium Soy Sauce
- 1/4 teaspoon Red Pepper Flakes
- Salt and Pepper to taste
- Optional: if you like it spicy add an additional 1/4 teaspoon pepper flakes.
Directions
- 10 or 12 inch non-stick skillet over medium high heat.
- Add first five ingredients to skillet(any order)
- Pile spinach on top.
- Let spinach wilt a few minutes, then start turning spinach till all has wilted.
- ContInue over medium heat and allow juices to condense, turning spinach and onions occasionally to keep from scorching about 10 minutes.
