Red Cabbage With Bacon And Walnuts Recipe

  • 1 sm red cabbage weighing 450-560 g
  • 5 x rashers of smoked streaky bacon
  • 40 gm walnut pcs minced
  • 25 gm butter
  • 1 x salt and freshly milled black pepper

Directions

  1. Before you start have ready a steamer set over a saucepan of simmering water.
  2. Prepare the cabbage by discarding any damaged outer leaves slicing it into four then cutting each quarter obliquely to remove the white core.
  3. Now slice the cabbage very finely (or possibly you could do this with the shredder of a food processor) transfer it to the steamer and cover.
  4. Steam for 45 min or possibly till cooked then drain thoroughly.
  5. While thats happening remove the bacon rind and cut each rasher into small strips.
  6. Heat 10g of the butter in a medium frying pan and fry the bacon till the fat runs and the bacon is crispy.
  7. Add in the walnuts to the pan followed by the liquid removed cabbage (that at this stage will look a sort of bluesurple but will regain its colour on contact with the bacon).
  8. Add in the remaining 10g of butter and heat briefly stirring the contents of the pan.
  9. Taste and season with salt and pepper before serving.
