Ingredients
- One (15 oz.) can packed pumpkin puree' (not to be confused with pumpkin pie filling)
- One (12 oz.) can of evaporated milk
- 3 large eggs, room temperature
- 1 and 1/2 cups of granulated sugar
- 1 tsp. of cinnamon
- 1/2 tsp. of salt
- For the Topping:
- 1 package of yellow butter cake mix
- 1 cup of chopped pecans
- 2 sticks (1 cup) of melted unsalted butter

%3C/p%3E%3Cp%3EHow%20many%20times%20have%20the%20words,%20%22There%20just%20aren't%20enough%20hours%20in%20the%20day%22%20entered%20your%20mind?%20For%20me,%20it's%20a%20weekly%20thing.%20Here%20are%20some%20of%20the%20things%20(in%20no%20particular%20order)%20that%20I%20would%20accomplish%20if%20the%20days%20were%20longer:%3C/p%3E%3Cp%3EEverything%20I%20cook%20would%20be%20homemade%20(from%20pasta%20noodles%20to%20sandwich%20bread%20to%20salsa).%3C/p%3E%3Cp%3EMy%20house%20would%20be%20completely%20clean%20from%20top%20to%20bottom.%3C/p%3E%3Cp%3EEveryone's%20laundry%20would%20be%20finished%20and%20put%20away%20every%20single%20day.%3C/p%3E%3Cp%3EI%20would%20have%20time%20to%20watch%20all%2080%20episodes%20of%20The%20Pioneer%20Woman%20and%20Trisha's%20Southern%20Kitchen%20on%20my%20DVR.%3C/p%3E%3Cp%3EMy%20family%20and%20I%20would%20have%20ample%20time%20to%20spend%20together%20after%20everyone's%20homework%20and%20after%20school%20activities%20were%20done.%3C/p%3E%3Cp%3EIf%20only%20there%20were%20enough%20hours%20in%20the%20day...right?%20Truth%20of%20the%20matter%20is,%20I%20do%20have%20the%20time%20to%20implement%20some%20of%20these%20tasks,%20however%20the%20hours%20just%20aren't%20long%20enough.%20What%20would%20you%20accomplish%20if%20there%20were%20more%20then%208%20hours%20in%20a%20day?%3C/p%3E%3Cp%3ELucky%20for%20us,%20this%20dessert%20doesn't%20take%20much%20time%20to%20make....and%20is%20so%20darn%20deliciously%20good%20There%20are%20three%20layers%20to%20it:%20the%20bottom%20layer%20resembles%20pumpkin%20pie%20filling,%20the%20middle%20layer%20is%20buttered%20cake,%20and%20a%20crunchy%20nutty%20layer%20finishes%20off%20the%20top.%20It%20resembles%20a%20pumpkin%20pie,%20except%20in%20cake/bar%20form.%20Pair%20this%20with%20my%20homemade%20recipe%20for%20whipped%20cream%20and%20you%20will%20have%20one%20awesome%20dessert%20for%20the%20holidays%20(or%20for%20any%20occasion).%3C/p%3E%3Cp%3EMy%20seven%20year%20old%20son%20LOVES%20this%20recipe,%20as%20do%20Husband%20Man%20and%20I.%20My%20nine%20year%20old%20daughter%20on%20the%20other%20hand,%20does%20not%20like%20it.%20Mainly%20because%20it%20has%20pecans%20in%20it.%20You%20can%20eat%20this%20dessert%20warm%20(the%20way%20I%20prefer%20it)%20or%20place%20it%20in%20the%20fridge%20to%20chill%20overnight%20and%20eat%20it%20cold%20the%20next%20day%20(the%20way%20hubby%20likes%20to%20eat%20it).%20It%20tastes%20wonderful%20either%20way%20you%20choose%20:)%3C/p%3E%3Cp%3E_____________________________________________%3C/p%3E%3Cp%3E(Serves%208-10)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20350%20degrees.%20Spray%20nonstick%20spray%20into%20a%2013x9%20inch%20baking%20dish.%3C/p%3E%3Cp%3E2.%20Using%20an%20electronic%20mixer,%20mix%20the%20pumpkin%20puree',%20evaporated%20milk,%20eggs,%20granulated%20sugar,%20cinnamon,%20and%20salt%20in%20a%20medium%20bowl%20until%20well%20blended.%3C/p%3E%3Cp%3E3.%20Pour%20into%20greased%20baking%20dish.%3C/p%3E%3Cp%3E4.%20Sprinkle%20evenly%20with%20dry%20cake%20mix.%3C/p%3E%3Cp%3E5.%20Add%20the%20pecans.%20Drizzle%20the%20melted%20butter%20on%20top%20of%20the%20pecans.%3C/p%3E%3Cp%3E6.%20Bake%20for%2050-60%20minutes,%20or%20until%20toothpick%20inserted%20into%20the%20dessert%20comes%20out%20clean.%3C/p%3E%3Cp%3E7.%20Cool%20for%2015%20minutes%20or%20place%20in%20the%20refrigerator%20to%20chill.%3C/p%3E%3Cp%3E8.%20Serve%20with%20whipped%20cream%20to%20garnish.%3C/p%3E%3Cp%3ELibby's%20Notes:%20The%20mixture%20in%20step%202%20will%20take%20on%20a%20liquid%20consistency.%20This%20is%20supposed%20to%20happen.%3C/p%3E){kind=link}
