Pollo a la Miel (Andalusian Chicken with Honey & Saffron) Recipe

Ingredients

  • approx. 4 lbs of chicken pieces, skin on and bone in (or 1 chicken cut up), rinsed and patted dry
  • coarse salt to taste
  • 1/2 t ground cumin
  • 1/2 t ground ginger
  • 1/2 t ground coriander
  • 1/2 cup fresh lemon and/or lime juice (or a combo)
  • 2 T light honey
  • 1 large pinch of saffron, steeped in 1 T hot water for 15 minutes and then strained (retaining the water)
  • 1 large onion, thinly sliced
  • 1 T extra virgin olive oil, preferably Spanish
  • 1 t light honey
  • 2 T lightly toasted sesame seeds
