  • 2 x thick pork, chops
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. oil
  • 2 x apple, cored, and, cut into wedges
  • 1 x lemon
  • 3 clv garlic, smashed
  •     salt
  •     pepper

Directions

  1. Preheat your oven to 450F/230C.Spread some mustard on both sides of the pork chops. Heat the oil in a frypan over medium-high heat. Add in the pork chops and cook for 2 min on each side, just till browned.
  2. Place the apples in the frypan. Cut the lemon in half, squeeze the juice over top and place the lemon halves in the frypan too. Smash the garlic cloves with the back of a knife and add in them to the pan. Season with salt and pepper.
  3. Bake in the oven for 20-25 min. Remove the pork chops from the oven and let them rest for about 5 min.
