Ingredients

  • 2 tablespoons coconut oil
  • 1/2 medium red onion, diced
  • 1 stalk of celery, diced
  • 1 large carrot, peeled and diced
  • 1 cup pancetta or thick-cut bacon, diced
  • 1 tablespoon coconut flour
  • 1 cup sweet potato, diced, about 1 medium
  • 2 cups mushrooms, any variety, chopped (I used a variety of shiitake, bellas, and oyster mushrooms)
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons thyme leaves, plus extra for garnish
  • 1 package, 17.6 ounces, of beef bone broth
  • 1 cup of water
