Moroccan Roasted Salmon With Mango Salsa Recipe

Ingredients

  • 1 1/2 c. mango peeled and minced
  • 2 Tbsp. red onion finely minced
  • 2 Tbsp. mint minced
  • 2 Tbsp. orange juice
  • 1 1/2 tsp commercial harissa (see notes)
  • 1 1/2 lb salmon fillet skinned and cut
  •     crosswise into 4 pcs
  • 1/4 tsp salt
  •     cooking spray

Directions

  1. Preheat oven to 450F.
  2. Combine first 4 ingredients in a bowl; cover and chill. Spread harissa over both sides of salmon; sprinkle with salt.
  3. Place salmon on a baking sheet coated with cooking spray. Bake for 20 min or possibly till the fish flakes easily with tested with a fork.
  4. Serve with mango salsa.
  5. NOTES : Harissa is a warm sauce made with chile peppers, garlic, cumin, coriander, and caraway. It's sold in Middle Eastern markets and specialty food shops.
  6. Serve with Casablanca couscous.
