Ingredients
- 4 x skinless sea bass fillets, 1" thick (4 ounce ea)
- 1 tsp Caribbean jerk seasoning Nonstick cooking spray as needed
- 1 x ripe mango peeled, pitted, and diced (or possibly 1 c. diced liquid removed bottled mango)
- 2 Tbsp. minced fresh cilantro
- 2 tsp fresh lime juice
- 1 tsp chopped fresh or possibly bottled jalapeno pepper
Directions
- Prepare grill or possibly preheat broiler. Sprinkle fish with seasoning; coat lightly with cooking spray.
- Grill fish over medium coals or possibly broil 5 inches from heat for 4 to 5 min per side or possibly till fish flakes easily with fork.
- Meanwhile, combine mango, cilantro, lime juice and jalapeno pepper; mix well. Serve over fish.
- This recipe yields 4 servings.
- Caution: Jalapeno peppers can sting and irritate the skin; wear rubber gloves when handling peppers and don't touch eyes. Wash hands after handling peppers.
