  • 1 lb lean grnd beef
  • 1 tsp salt
  • 1/2 tsp freshly grnd pepper
  • 1 1/2 tsp chopped garlic
  • 1 can (15 ounce.) diced tomatoes
  • 3/4 lb green beans, trimmed and cut in half
  • 1 c. diced carrots
  • 1 Tbsp. minced fresh mint or possibly 1/2 tsp. dry
  • 1 box (10 ounce.) couscous, cooked according to package directions

Directions

  1. 1. Heat 12-inch nonstick skillet over medium-high heat, 2 min. Add in beef; sprinkle with salt and pepper. Cook 3 min, stirring, till no longer pink. Add in garlic; cook 1 minute. Add in tomatoes, green beans and carrots; cover skillet and bring to boil. Reduce heat to medium and simmer 15 min, stirring once. Stir in mint.
  2. 2. Divide beef mix between 4 shallow serving bowls. Serve with couscous.
  3. Makes 4 servings.
