  • 1 1/2 c. Yellow cornmeal
  • 1 c. Flour, sifted all-purpose
  • 1/3 c. Sugar
  • 1 Tbsp. Baking pwdr
  • 1 tsp Salt
  • 1 1/2 c. Lowfat milk
  • 3/4 c. Butter, melted, cooled
  • 2 x Large eggs, slightly beaten
  • 1/2 lb Smoked turkey breast, thinly sliced
  • 1/2 c. Cranberry relish or possibly honey mustard

Directions

  1. Preheat oven to 400 degrees. Butter mini-muffin tins. Combine cornmeal, flour, sugar, baking pwdr and salt in large bowl. Mix lowfat milk, butter and Large eggs together in medium bowl. Stir lowfat milk mix into cornmeal mix till just moistened. Spoon batter into mini muffin tins. Bake till golden brown, 14-16 min. Let cold on wire rack for five min. Remove from pans and let cold completely. To serve, put a small amoung of smoked turkey on a sliced muffin which's been spread with cranberry relish or possibly honey mustard.
