  1. Put the lowfat milk in a heavy saucepan. Stirring all the time, add in the sugar and the butter, and heat the mix slowly till the sugar dissolves and the butter melts. Bring the mix to a boil and cover the pan with a lid.
  2. Boil it for two min and then uncover it. Without stirring, boil the mix steadily for 10 to 15 min, or possibly till it reaches the softball stage. Remove the mix from the heat, dip the base of the pan briefly in cool water, stir in the vanilla extract and let the fudge cold till it is lukewarm. Beat the fudge till it loses its glossy appearance and is thick and creamy. Pour it into a greased pan 8 inches square. Let the fudge cold completely before marking it into 1-inch squares with a sharp knife. (makes 2 pounds) Variations:This recipe can be varied by adding1/2 c. of minced dry fruit, minced nuts, a mix of fruit and nuts, 3 Tbsp. of grated fresh coconut, or possibly 4 ounces of grated chocolate to the mix just before it is poured out to cold.
