Ingredients

  • 12 x chicken wings, fresh or possibly thawed washed
  • 2 ounce Tabasco brand Garlic Pepper Sauce
  • 1 ounce extra virgin olive oil
  • 1 ounce garlic chopped
  • 3 ounce onions chopped fine
  • 2 ounce cocoa pwdr
  • 6 ounce chicken stock
  • 1/2 ounce Mexican herb blend
  • 1 c. small-diced red bell

Directions

  1. Char broil the wings to impart grill flavor and "mark", but don't cook completely through.
  2. In a heavy-bottomed saucepan, heat oil to smoking point, then add in onions and toss till golden. Add in garlic and cook for 1 more minute, then add in cocoa. Stir till cocoa is proportionately distributed and no longer has a dry appearance. Add in chicken stock and stir till smooth.
  3. Add Mexican herb blend and Tabasco brand Garlic Pepper Sauce. Remove from heat and stir till cooled. This sauce will be the Mole (Mexican Chocolate) sauce.
  4. Heavily dredge wings with the Mole sauce. Place in oven and cook till done - till an internal temperature of 165 degrees is reached.
  5. Serve topped with small-diced red bell peppers.
  6. This recipe yields 1 dozen wings.
  7. Yield: 1 dozen
