Maitake Mushroom Tikka Masala: Review of Shroom Recipe

Ingredients

  • 1½ teaspoons coriander seeds
  • 1 teaspoon cumin seeds
  • ½ teaspoon red pepper flakes
  • Seeds of 3 cardamom pods (about ¼ teaspoon)
  • 1 (1-inch) piece cinnamon stick
  • ½ teaspoon ground turmeric
  • 1½ tablespoons menthe (fenugreek leaves)
  • 1 charcoal briquette (I recommend using a natural hardwood charcoal)
  • 3 tablespoons ghee
  • ½ cup small-diced shallot
  • 1½ teaspoons fine sea salt
  • 1 tablespoon minced garlic
  • 1 tablespoon grated fresh ginger
  • 14 ounces maitake mushrooms, main stem trimmed, caps torn into bite-size pieces
  • 2 medium red tomatoes, cored
  • ½ cup Mushroom Stock (page xxiii) [See bottom of instructions]
  • 2 teaspoons honey
  • ½ cup Greek yogurt
  • ½ cup heavy cream
  • 1 medium Yukon Gold potato, medium diced (about 1½ cups)
