This recipe is so simple and would be a great base to start experimenting. You could add shrimp or chicken. Substitute kale or chard for the arugula. Or leave it as is and it's delicious as a side dish or light summer main.

Ingredients
- 1 pound linguine
- 1/2 stick of butter
- 1 1/2 c grated Romano or Parmesan cheese
- black pepper
- Several large handfuls of arugula
Directions
- Bring a large pot of salted water to a boil.
- Cook the linguine to desired doneness and drain, reserving some of the liquid.
- Transfer the pasta to a bowl and toss in the butter and cheese.
- Wilt in the arugula and toss with pepper.
- If the pasta is sticky or too thick, thin with pasta water until the consistency is as desired.
