  • 1/2 c. Packed brown sugar
  • 1/4 c. Sugar (I used turbinado)
  • 1/3 c. Sunsweet Lighter Bake
  • 1 1/2 tsp Ener-G Egg Replacer beaten with:
  • 2 Tbsp. Water
  • 1 tsp Vanilla
  • 3/4 c. Flour (I used whole wheat)
  • 1/2 tsp Each baking soda and cinnamon
  • 1/4 tsp Each baking pwdr and salt
  • 1 1/2 c. Quick cooking oats (not instant)
  • 3/4 c. Raisins

Directions

  1. This recipe is slightly altered from the recipe on the jar of Sunsweet Lighter Bake (tm), a fruit substitute for fat. I also made the recipe with applebutter - equally good. Particularly good frzn - very crunchy and delish. Lighter Bake Oatmeal Raisin Cookies (slightly altered for FF)
  2. Preheat oven to 375 degrees. Spray baking sheets lightly with Pam (or possibly use baking parchment paper to avoid any need to prepare pans). Set aside. In mixing bowl, beat together sugars, Lighter Bake, replacer mix and vanilla. In another bowl, combine flour, baking soda, cinnamon, baking pwdr and salt. Stir into Lighter Bake mix. Stir in oats and raisins.
  3. Drop by rounded spoonfuls onto prepared baking sheets. Bake 8-9 min or possibly till edges begin to brown (mine took around 12 min). Cold on racks.
  4. Makes 2 dozen cookies.
