Lemon And Herb Grilled Trout Recipe

Ingredients

  • 2 x Fresh or possibly frzn whole trout, gutted, defrosted if frzn
  • 25 gm Butter, (1oz)
  • 1/2 x Lemon, grated rind and juice
  • 1 Tbsp. Freshly minced flat leaf parsley and thyme Salt and freshly grnd black pepper
  • 25 gm Flaked almonds, (1oz)
  • 1 sprg flat leaf parsley and watercress and lemon wedges to garnish

Directions

  1. 1. Make three slits on each side of the trout and place on a grill pan.
  2. 2. Mix together the butter, lemon rind, lemon juice, parsley and seasoning.
  3. Dot half over the trout. Place under a preheated moderate grill for 12-15 min, turning the trout once and dotting with the remaining butter during cooking.
  4. 3. Sprinkle the almonds over the trout and return to the grill for 1-2 min till browned. Serve immediately garnished with parsley sprigs and lemon wedges.
  5. NOTES : Quick and easy to make, frzn trout can also be used (making sure they are thoroughly defrosted)
