  • 2 x Thin leeks, about 250g each
  • 100 gm Red currants, (aalbessen)
  • 1 x Egg, lightly beaten
  • 1/2 Tbsp. French mustard
  • 3 Tbsp. Flour
  • 4 x Kip filets, about 100g each Celery salt Pepper
  • 2 Tbsp. Butter
  • 1 x Granny Smith apple
  • 2 Tbsp. Minced parsley

Directions

  1. Translation: A "kip filet" is a skinless, boneless chicken breast half.
  2. Remove the roots and ugly leaves from the leeks. Slice into thin rings.
  3. Rince in a colander. Let drain.
  4. Rinse the currants. Above a bowl, use a fork to remove the currants from their stems. In a deep bowl, mix together the egg, mustard, and flour.
  5. Salt and pepper the kip filets. Heat the butter in a frying pan. Coat the chicken with the egg mix. Saute/fry, turning occasionally, till golden on both sides, about 10 min total.
  6. Meanwhile, peel and core the apple and cut into thin slices. Remove the chicken from the pan and keep hot. To the same pan, add in the leeks and cook, stirring, about 2 min. Add in the currants and apple. Continue cooking another minute, till warmed through. Transfer to a serving plate.
  7. Arrange chicken on top. Sprinkle with parsley.
