- 1 1/2 c. Roasted peanuts
- 1/4 c. Fried shallots
- 2 x Garlic cloves
- 5 x Thai bird chiles
- 1 Tbsp. Chopped galangal
- 1 Tbsp. Sugar
- 1 tsp Kosher salt
- 2 x Limes juiced
- 4 x Kaffir lime leaves
- 1/4 c. Sweet soy sauce
- 2 c. Water
Directions
- In a food processor, combine all. Add in water. Check for seasoning. Cook slowly, about 30 min, till sauce consistency is achieved.
