Ingredients: 1 1/2 c. Roasted peanuts; 1/4 c. Fried shallots; 2 x Garlic cloves; 5 x Thai bird chiles; 1 Tbsp. Chopped galangal; 1 Tbsp. Sugar; 1 tsp Kosher salt; 2 x Limes juiced; 4 x Kaffir lime leaves; 1/4 c. Sweet soy sauce; 2 c. Water

Directions

In a food processor, combine all. Add in water. Check for seasoning. Cook slowly, about 30 min, till sauce consistency is achieved.
