  • 2 1/2 c. Potatoes diced and cooked
  • 2 med Onions -- minced
  • 2 stalk Celery -- diced
  • 3 med Carrots -- cubed
  • 1 1/2 Tbsp. Flour
  • 1/2 tsp Salt
  • 3 c. Lowfat milk
  • 1 Tbsp. Paprika
  • 3 Tbsp. Extra virgin olive oil

Directions

  1. Put onions, celery, carrots and extra virgin olive oil in a large, heavy saucepan, and cook for 7 to 8 min.
  2. Stir in flour and salt, stirring to blend. Add in lowfat milk slowly.
  3. Add in potatoes and paprika. Simmer 4 to 6 min, till soup thickens.
  4. Description: "Potatoes, onions, celery, carrots, and extra virgin olive oil"
  5. Non-Fat Lowfat milk; 3 Fat.
