Italian Chicken With Potatoes And Onion Recipe

Ingredients

  • 2 x 2.5 pound chickens - cut Extra virgin olive oil
  • 2 x White onions - sliced
  • 8 lrg Potatoes - quartered
  • 2 Tbsp. Oregano
  • 1 c. Minced parsley Salt and pepper

Directions

  1. Directions: Place the cut chicken into boiling, salted water for 30 min. While the chicken cooks, pour 1" of extra virgin olive oil into a 24x18x2" baking pan. Remove chicken from water and blot dry. Place in the pan with the oil. Add in the sliced onion and potatoes. Season with salt and pepper.
  2. Stir in the oregano and parsley. Bake at 350 degrees for approximately 1 hour, stirring every 15 min.
  3. Serves 4.
