IRISH Soda bread Recipe

, this is no ordinary bread and two, good bread can form the basis of a million tasty starter dishes.
The recipe for the bread we will be baking today comes courtesy of Joan and her husband Pat from Athlone Ireland
So try, and keep the recipe forever, because with this bread can enhance and create a million dishes by serving it with soup, dips, paté, fish and a wide variety of meats and vegetables.
With the ingredients below Joan makes a large round bread which she divides into four and each quarter is enough to make starters for four people.
The bread keeps well, wrapped up and chilled or even frozen.

Ingredients

  • 500g Nutty Brown flour
  • 1 heaped teaspoon bicarb
  • 1 heaped teaspoon fine salt.
  • ¾ litre buttermilk/sour milk
  • 1 cup wheat germ

Directions

  1. In a mixing bowl combine dry ingredients, sieve or press bicarb to remove any lumps.
  2. Add milk and mix well until sticky.
  3. Turn onto floured board and knead gently until base is smooth Shape dough into a good round (or do as I did, and divide the dough into four smaller round breads).
  4. Place in a greased baking tin in an oven preheated to 220 degrees Celsius.
  5. Bake for approximately 40 minutes or until a good crust has been formed and the bread sounds hollow when you tap it.
  6. Remove from oven and let the bread cool on a rack.
