Ingredients

  • Moroccan Chicken
  • 2 teaspoons sweet paprika
  • 1 1/2 teaspoons ground cumin

  • salt and ground black pepper
  • 3 tablespoons olive oil
  • 8 bone in, skin on chicken thighs (about 3 pounds), trimmed of excess fat
  • 1 large onion, halved and sliced thin
  • 2 tablespoons water
  • 4 medium garlic cloves, minced
  • 2 bay leaves
  • 1/2 cup golden raisins
  • 1 (2-inch) strip of lemon peel
  • 1/2 cup kalamata olives, pitted and coarsely chopped
  • 2 cups low sodium chicken broth
  • 3 tablespoons juice from 1 lemon
  • 2 tablespoons chopped fresh parsley or cilantro leaves
