This was so easy I couldn't believe it! We love the flavor of chipoltes...and we use them as often as we can...but they can get expensive. So...we did our own!

For Thanksgiving, smoked a brisket instead of a turkey. I looked up way to make our own chipoltes. And lo and behold...they are jalapenos...smoked. I grabbed a half dozen at the grocery store... sliced them in half...threw em on the smoker with our brisket.

We did a taste test comparison between a store-bought chipolte and the ones we smoked. And guess what? They tasted the same. Well...maybe ours were a LITTLE better...ours were fresh!

DJ put these chipoltes in a spice grinder. They came out perfectly. Now we use them for a little extra added flavor...and used them to replace cayenne pepper in a couple recipes. Need to get some more jalapenos!

A couple extra notes on this recipe. We left the seeds in the peppers. Next time, I think we'll remove the seeds...just to see if it changes the taste. And next time, I think I'll try smoking the peppers whole instead of slicing them...just to try it a different way.

I'm so proud of the way they turned out!
