Ingredients

  • for about 4 Eggs Benedict or 4 servings
  • 2 egg yolks
  • approximately 1/4 cup of clarified butter or more if necessary (room temperature)
  • fresh juice of half a lemon (about 2 tsp)
  • salt
  • fresh pepper to taste
  • splash of white wine or white cooking wine (optional if you like the sauce to be thiner)
