Hawaiian Pinwheel Wrap Recipe

You may have encountered these wraps at a cocktail party. They're delicious and can be made with your ingredients of choice.  They can be totally vegetarian or a mixture of meat vegetables and dairy. I've chosen a Hawaiian version: cream cheese, imitation crab, pineapple and red bell pepper. Since they're great to consume chilled, you can prepare them in advance and refrigerate for your next snack time or for your unexpected guests.

Directions

  1. In a medium bowl, mix crab, cream cheese and bell pepper.
  2. Cover bowl with paper towel and place in microwave to cook for 1 minute, or just enough to melt the cream cheese.
  3. Remove from microwave and add pineapple chunks and salt and pepper to taste. Mix well and let it cool.
  4. Place one flatbread on a large plate.
  5. Place one lettuce leaf on the end of the bread closest to you. Place a fourth of the crab mixture on top of the lettuce. Roll the bread away from you, as if rolling a burrito. Wrap with foil.
  6. Repeat process for the rest of the bread and crab mixture. Refrigerate.
  7. When ready to serve, remove from foil and cut with a serrated knife to make 1-inch pinwheels.
