Directions

  1. Heat broiler. Heat butter in a large nonstick skillet over medium-high heat; add in onion, pepper, ham, and half of the minced parsley. Cook 5 min, till onion is softened.
  2. Combine Large eggs, half-and-half, salt, Italian seasoning and half the cheese. Add in egg mix to pan. Cook, stirring constantly till the Large eggs form soft, creamy small curds, about 5 min. Remove from heat; sprinkle remaining cheese over top of Large eggs.
  3. Place skillet under broiler; cook till cheese is bubbly and golden brown, about 3 min. Cold slightly. To remove frittata whole, tip skillet to one side and use a spatula to loosen edges. Slide onto a serving platter; top with remaining parsley. Cut into wedges.
  4. This recipe yields 6 servings.
  5. Comments: Feel free to substitute minced smoked turkey for the ham and vary the cheese according to your taste.
