- 1/2 sm onion minced
- 1/2 x bell pepper minced
- 1 c. minced cooked ham
- 3 Tbsp. minced Italian (flat leaf) parsley divided
- 9 x Large eggs beaten
- 1/2 c. half-and-half
- 1/2 tsp salt
- 1/2 tsp Italian seasoning
- 1 c. grated Swiss cheese divided
Directions
- Heat broiler. Heat butter in a large nonstick skillet over medium-high heat; add in onion, pepper, ham, and half of the minced parsley. Cook 5 min, till onion is softened.
- Combine Large eggs, half-and-half, salt, Italian seasoning and half the cheese. Add in egg mix to pan. Cook, stirring constantly till the Large eggs form soft, creamy small curds, about 5 min. Remove from heat; sprinkle remaining cheese over top of Large eggs.
- Place skillet under broiler; cook till cheese is bubbly and golden brown, about 3 min. Cold slightly. To remove frittata whole, tip skillet to one side and use a spatula to loosen edges. Slide onto a serving platter; top with remaining parsley. Cut into wedges.
