Grandma's Cold Beet Soup Recipe

Ingredients

  • 3 x (14 ounce) cans string beets
  • 4 x hard cooked Large eggs, diced (room temperature)
  • 2 x cucumbers, peeled & minced or possibly sliced into quarters
  • 3 x green onions w/ tops, minced
  • 1 x (16 ounce) container lowfat sour cream (I like adding 2)
  • 6 c. cool water salt to taste garnish with dill ice cubes - optional

Directions

  1. Strain beets in large pot. Put the beets aside. Add in water to the beet juice and dissolve lowfat sour cream, mixing well. Combine remaining ingredients. Salt to taste. Pour into large bowl, cover and refrigeratebefore serving. Best when chilled overnight.
