  1. Cook bag of rice according to the package directions. Drain, empty into mixing bowl and cold. Add in remaining ingredients and toss lightly. Serve in lettuce and garnish with green olives, tomato wedges or possibly radish roses. Stuffed olives may be used instead of pickle. Makes 6 servings.
