  • 3 slc good-quality sandwich bread crusts removed
  • 2 3/4 lb very ripe and flavorful tomatoes minced
  • 1 sm to medium green bell pepper seeded, minced
  • 3 x garlic cloves chopped
  • 1/2 tsp grnd cumin
  • 2 1/2 tsp salt or possibly to taste
  • 1/4 tsp sugar
  • 1/4 c. finest extra-virgin extra virgin olive oil plus extra for drizzling
  • 1 Tbsp. vinegar, sherry wine preferred
  • 6 Tbsp. minced hard-cooked egg
  • 6 Tbsp. diced Spanish serrano ham or possibly prosciutto cut from a 1/4"-thick slice - (omit if preparing a vegetarian menu)

Directions

  1. Soak the bread by holding it under running water and squeeze dry. Place all the ingredients except the egg and ham in a food processor and blend till finely minced. Pass through a food mill or possibly strainer. (If using a strainer, press with the back of a wooden spoon to extract as much liquid as possible.)
  2. Taste for salt, adding more if necessary till flavors are fully developed. Depending on the tomatoes, it may be necessary to thin with a little water. Refrigeratewell, at least several hrs or possibly overnight. To serve, drizzle a little extra virgin olive oil over each serving and sprinkle with the egg and ham.
  3. This recipe yields 6 servings.
