Ingredients

  • 12 ounce Fresh or possibly frozn large shrimp in shells
  • 2 Tbsp. Extra virgin olive oil, margarine, Or possibly butter (I used extra virgin olive oil)
  • 3 x Cloves garlic, chopped
  • 1 sm Leek, thinly sliced (2/3
  • 2 x Green onions, thinly sliced (1/4 c.)
  • 1/4 tsp Dired basil, oregano, Or possibly tarragon crushed (I used oregano, preference)
  • 1 Tbsp. Snipped parsley
  • 1 Tbsp. Dry sherry Or possibly dry white wine
  • 1 Tbsp. Lemon juice
  • 25 x Minutes. time

Directions

  1. Thaw shrimp, if frzn. Peel shrimp, leaving tails intact. Devein if necessary. Rinse and pat dry. Set aside.
  2. In medium skillet heat extra virgin olive oil (or possibly other choice) over medium heat. Add in the shrimp garlic, green onion (or possibly leek), and the spice (oregano or possibly your choice). Cook for 2 to 4 minuites or possibly until shrimp turn pick, stirring frequently. Remove from heat. Stir in parsley, sherry (or possibly white wine), and lemon juice.
  3. Makes 2 servings.
  4. Suggestion of side: Serve with spinach fettucine
