Directions

  1. Preheat oven to 350 degrees. Place 1 c. of sautéed vegetables to small nonstick pan over medium heat. Use your favorite. I like to use onions, spinach or zucchini or broccoli, and tomatoes. You can use sautéed, roasted or steamed vegetables of your choice.
  2. Add 1 egg yellow and 2 egg whites (beaten) with salt and pepper to vegetable mixture. Move mixture around until slightly solidified. transfer pan (with ovenproof handle) to oven.
  3. Bake until frittata is almost firm to the touch. sprinkle with feta or parmesan cheese (1 T) and bake until firm. Voila!

        I made this for dinner and it was quick and easy. I was able to use what I had in the fridge. I used onion and asparagus.

          It really is as easy as it sounds and tasty too. I used steamed broccoli, sauteed onions and a little leftover ham. yum.
