%20so%20I%20thought%20I%20would%20go%20ahead%20and%20make%20a%20summer%3C/p%3E%3Cp%3Edessert,%20you%20know,%20since%20it's%20almost%20over%20now.%20I%20would%20say%20this%20is%20an%20easy%20recipe,%3C/p%3E%3Cp%3Ebut%20it's%20not%20necessarily%20a%20quick%20one.%20You%20could%20make%20the%20pastry%20cream%20the%20day%3C/p%3E%3Cp%3Ebefore%20though%20and%20have%20it%20in%20the%20refrigerator%20and%20that%20would%20speed%20things%20up.%3C/p%3E%3Cp%3EThen%20all%20you%20would%20need%20is%20to%20bake%20the%20crust%20and%20cut%20the%20peaches,%20that%20would%20be%3C/p%3E%3Cp%3Epretty%20quick.%20I%20also%20used%20vanilla%20bean%20paste%20so%20that%20the%20pastry%20cream%20had%20the%3C/p%3E%3Cp%3Elovely%20specks%20of%20vanilla.%3C/p%3E%3Cp%3EAnother%20good%20thing%20about%3C/p%3E%3Cp%3Ethis%20tart%20is%20that%20even%20if%20you%20leave%20it%20in%20the%20refrigerator%20over%20night%20(covered)%3C/p%3E%3Cp%3Ethen%20the%20crust%20(for%20me%20at%20least)%20didn't%20get%20soggy.%20I%20was%20pretty%20excited%20about%3C/p%3E%3Cp%3Ethat.%20The%20crust%20does%20have%20a%20snap%20to%20it%20so%20if%20you%20want%20a%20soft%20crust%20then%20this%3C/p%3E%3Cp%3Eisn't%20for%20you%20but%20if%20you%20like%20the%20crisp%20crust%20with%20your%20tarts%20then%20you%20found%20a%3C/p%3E%3Cp%3Egood%20one.%20Happy%20Baking!%3C/p%3E%3Cp%3EPeach%3C/p%3E%3Cp%3ETart%3C/p%3E%3Cp%3EMakes%201%209%E2%80%9D%20tart%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Prepare%20the%20tart%3C/p%3E%3Cp%3Eshell%20by%20whisking%20the%20flour,%20sugar,%20and%20salt%20together%20in%20a%20bowl.%20Add%20in%20the%3C/p%3E%3Cp%3Evanilla%20extract%20and%20the%20butter,%20then%20stir%20until%20the%20dough%20is%20mixed%20and%20soft.%3C/p%3E%3Cp%3EPress%20the%20dough%20onto%20the%20bottom%20and%20sides%20of%20a%209%E2%80%9D%20tart%20pan.%20Chill%20the%20dough%20in%3C/p%3E%3Cp%3Ethe%20pan%20for%2030%20minutes.%3C/p%3E%3Cp%3E2.%20While%20the%20dough%3C/p%3E%3Cp%3Eis%20chilling,%20preheat%20the%20oven%20to%20375F.%20Place%20a%20sheet%20of%20parchment%20in%20the%20tart%3C/p%3E%3Cp%3Epan%20and%20top%20with%20pie%20weights%20(or%20dried%20beans).%20Bake%20about%2020%20minutes%20until%20the%3C/p%3E%3Cp%3Edough%20starts%20to%20turn%20golden%20on%20the%20edges,%20about%2020%20minutes.%20Take%20the%20pan%20out%20of%3C/p%3E%3Cp%3Ethe%20oven%20and%20remove%20the%20parchment%20and%20pie%20weights.%20Using%20a%20fork%20prick%20holes%20in%3C/p%3E%3Cp%3Ethe%20crust%20then%20continue%20to%20bake%20until%20the%20entire%20crust%20is%20lightly%20browned,%3C/p%3E%3Cp%3Eabout%2010-12%20minutes.%20Cool%20completely.%3C/p%3E%3Cp%3E3.%20Mix%20the%20sugar%20and%3C/p%3E%3Cp%3Eegg%20yolks%20together%20in%20a%20medium,%20heatproof%20bowl.%20Soft%20the%20cornstarch%20and%20flour%3C/p%3E%3Cp%3Eover%20the%20egg%20mixture%20then%20mix%20together%20until%20the%20mixture%20is%20smooth.%3C/p%3E%3Cp%3E4.%20Bring%20the%20milk%20to%3C/p%3E%3Cp%3Ejust%20boiling%20in%20a%20saucepan,%20then%20remove%20from%20heat%20and%20temper%20a%20little%20at%20a%20time%3C/p%3E%3Cp%3Einto%20the%20egg%20mixture%20while%20whisking%20the%20egg%20mixture%20constantly%20so%20it%20will%20not%3C/p%3E%3Cp%3Ecurdle.%20Strain%20the%20pastry%20cream%20into%20a%20clean%20saucepan..%3C/p%3E%3Cp%3E5.%20Cook%20the%20pastry%3C/p%3E%3Cp%3Ecream%20mixture%20over%20medium%20heat,%20while%20stirring%20constantly,%20until%20it%20is%20boiling,%3C/p%3E%3Cp%3Ethen%20cook%20an%20additional%2030-60%20seconds%20until%20it%20is%20really%20thick.%20Stir%20in%20the%3C/p%3E%3Cp%3Evanilla%20extract%20or%20vanilla%20bean%20paste.%20Pour%20the%20mixture%20into%20a%20clean%20bowl%20and%3C/p%3E%3Cp%3Ecover%20with%20plastic%20wrap%20on%20the%20surface%20to%20that%20a%20crust%20does%20not%20form%20while%20it%3C/p%3E%3Cp%3Eis%20cooling.%20Cool%20the%20mixture%20to%20room%20temperature.%20Refrigerate%20if%20the%20pastry%3C/p%3E%3Cp%3Ecream%20is%20not%20being%20using%20directly%20after%20cooling.%20Before%20using%20the%20mixture%20stir%20it%3C/p%3E%3Cp%3Eto%20remove%20any%20lumps%20that%20formed%20during%20cooling.%3C/p%3E%3Cp%3E6.%20Evenly%20spread%20the%3C/p%3E%3Cp%3Ecooled%20pastry%20cream%20mixture%20into%20the%20cooled%20tart%20crust.%20Decoratively%20lay%20out%3C/p%3E%3Cp%3Ethe%20peaches%20on%20the%20pastry%20cream.%20Refrigerate%20if%20not%20serving%20immediately.%3C/p%3E%3Cp%3EThis%20recipe%20may%20be%20linked%20up%20to:%3C/p%3E){kind=link}
