Ingredients
- 250 g plain flour
- 125 g butter
- pinch of salt
- 1 tbs caster sugar
- cold water
- Filling:
- about 6 well-flavoured eating apples, or 4 Bramleys
- 1 quince
- 4-6 tbs golden caster sugar, to taste according to how tart the apples are
- 1 tbs cornflour
- 1/2 tsp cinnamon
- a few sultanas
- 1 egg white

.%20If%20possible,%20leave%20it%20to%20rest%20in%20the%20fridge%20for%20half%20an%20hour.%3C/p%3E%3Cp%3EMix%20the%20sugar,%20cinnamon,%20and%20cornflour%20in%20a%20small%20bowl.%20In%20another%20bowl,%20whisk%20up%20the%20egg%20white%20with%20a%20fork,%20just%20enough%20to%20make%20it%20a%20bit%20frothy.%20Peel,%20core,%20and%20slice%20the%20apples%20thinly.%20Peel%20the%20quince%20and%20then%20coarsely%20grate%20the%20flesh%20off%20it,%20stopping%20when%20you%20get%20to%20the%20core%20(quinces%20are%20very%20hard%20and%20this%20is%20easier%20than%20slicing%20them).%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20200C.%20Cut%20the%20pastry%20into%20two%20pieces,%20one%20slightly%20larger%20than%20the%20other.%20Roll%20out%20the%20larger%20bit%20into%20a%20circle,%20and%20use%20it%20to%20line%20your%20buttered%20pie%20dish,%20draping%20the%20excess%20over%20the%20rim%20(don%E2%80%99t%20cut%20it%20off%20yet).%20Paint%20a%20little%20of%20the%20egg%20white%20over%20the%20bottom%20(keep%20the%20rest,%20you%E2%80%99ll%20need%20it%20later).%20Layer%20the%20apples%20and%20quince%20in%20it,%20sprinkling%20each%20layer%20with%20the%20sugar%20mixture%20and%20a%20few%20sultanas.%20Pile%20the%20fruit%20up%20into%20a%20dome%20shape%20in%20the%20middle%20and%20finish%20with%20a%20layer%20of%20apples.%3C/p%3E%3Cp%3ERoll%20out%20the%20other%20piece%20of%20pastry%20into%20a%20circle%20big%20enough%20to%20cover%20the%20pie.%20Brush%20the%20pastry%20on%20the%20rim%20of%20the%20dish%20with%20a%20little%20more%20egg%20white,%20lay%20the%20lid%20over%20the%20top,%20and%20use%20the%20tines%20of%20a%20fork,%20or%20your%20thumb,%20to%20press%20the%20edges%20together%20and%20seal%20the%20fruit%20in.%20Use%20a%20small%20knife%20to%20cut%20off%20the%20excess%20pastry%20round%20the%20rim.%20Roll%20out%20these%20scraps%20and%20cut%20out%20shapes%20to%20decorate%20the%20top%20%E2%80%94%20make%20free-form%20shapes,%20letters,%20words,%20or%20use%20small%20cutters%20to%20make%20the%20shapes.%20Stick%20the%20shapes%20on%20with%20more%20egg%20white%20or%20water.%20Use%20the%20point%20of%20a%20knife%20to%20make%20a%20couple%20of%20small%20air%20vents%20in%20the%20centre%20of%20the%20pie.%3C/p%3E%3Cp%3EPut%20the%20pie%20in%20the%20oven%20and%20bake%20for%2020%20minutes%20to%20cook%20the%20pastry.%20Check%20on%20it%20to%20make%20sure%20it%E2%80%99s%20not%20browning%20too%20much%20%E2%80%94%20if%20it%20is,%20turn%20the%20oven%20down.%20Once%20the%20pastry%20is%20pale%20gold,%20brush%20all%20over%20the%20top%20with%20the%20remaining%20egg%20white%20and%20sprinkle%20on%20a%20little%20more%20sugar.%20Turn%20the%20oven%20down%20to%20160%20and%20bake%20for%20a%20further%2015-20%20minutes%20to%20crisp%20and%20brown%20the%20top%20and%20finish%20cooking%20the%20filling.%20Let%20it%20cool%20to%20lukewarm%20before%20serving.%3C/p%3E%3Cp%3EServe%20with%20custard,%20cream,%20or%20ice%20cream.%3C/p%3E){kind=link}
