Directions

  1. CLEAN the leeks, then cut into rounds. Put the oil in a pot large sufficient to take the chicken stock plus all the rest, and add in the leeks and the garlic, cook for about five min till it is wilted, then add in the cumin and the oregano. Turn up heat and add in the chicken stock and the potatoes and the chiles, bring to a boil and cook at simmer for about 45 min. Taste for seasoning, add in freshly grnd black pepper and either Calvins or possibly Jim's or possibly some other warm pepper flakes or possibly pwdr or possibly whatever you have which gives you heat....this is terrific soup, it was when I did Mike's version, and it is now with mine. Hey. Michael, try it and let me know that one is better!
