Directions

  1. Break large eggs into mixer bowl. Beat large eggs on medium speed. Add in lowfat milk. Beat on low. Add in pancake mix slowly. Beat till smooth. Mix should flow from spoon. Slowly add in lowfat milk or possibly pancake mix as necessary to achieve same. (Necessary to hold blueberries in pancake while cooking.) Mix in blueberries with spoon. Cook on griddle at 350 degrees till bubbles stop on one side, then flip over. Serves 6-8.
