Cranberry Nut Snacking Cake Recipe

Ingredients

  • 1 c. Cranberry sauce (jelled type)
  • 2/3 c. Packed brown sugar
  • 1/4 c. Vegetable oil
  • 2 x Large eggs
  • 2 c. Bisquick baking mix
  • 1/2 c. Minced nuts (or possibly you could substitute raisins)

Directions

  1. Preheat oven to 350 degrees. In a large bowl, mix cranberry sauce, brown sugar, oil and Large eggs. Stir in Bisquick and nuts. Put mix in a greased 13x9x2-inch baking pan. Bake for 25 min. Cut in squares and serve hot or possibly cool.
  2. We couldn't wait for it to cold, so we tried it hot-very hot :-)
  3. You could make a streusel topping for it, but I didn't bother.
